I’ve never been a huge fan of frozen taquitos. They’re usually so dry and bland you have to drench them in sour cream and hot sauce, but I’ve recently had a change of heart! Simply smother chicken or beef taquitos in enchilada sauce and cheese, and you’ve got yourself a simple family meal that everyone will love, even the pickiest of kids.

  • 20 pack frozen taquitos
  • 1 (16oz) can refried beans
  • 1 (19oz) can enchilada sauce
  • 2 cups shredded cheese
  • sour cream for serving

Frozen Taquito Dinner Casserole | This is basically a lazy way of making enchiladas! It's so easy, anyone can make it, yet it tastes like something you'd get at a fancy Mexican restaurant. Just 4 cheap ingredients for this simple meal: frozen taquitos (chicken or beef), enchilada sauce, refried beans, and cheese. So yummy! My picky eaters love it.

Step 1Scoop the beans into the bottom of a greased 9×13 baking dish and spread evenly.
